One of the best things I’ve done for myself lately was to buy my husband Jamie Oliver’s cookbooks as a Father’s Day gift. My husband cooks dinner for our family every night, and Jamie’s Meals In Minutes and Jamie’s Food Revolution have really inspired him.
What inspired me to write about this is that tonight, he made something incredible from Meals In Minutes: Silky Chocolate Ganache. I love dark chocolate more than any other food, so this was an extra special treat.
I was skeptical that he could find peanut and tree nut free chocolate with 62% cocoa solids or higher, as called for in the recipe. Happily, he found something I’ve never seen before – Baker’s Premium Supreme dark chocolate with 70% cocoa. The ingredients are: unsweetened chocolate, sugar, soy lecithin, and milk ingredients.
We cut the recipe down to serve four. To make the ganache:
Melt in double boiler:
4 squares dark chocolate
1 pat of butter
2/3 cup whipping cream
pinch of salt
Once smooth and fully incorporated, spoon into four cups or bowls and serve.
I made a platter of banana slices, halved and pitted cherries, cut up Rice Krispie squares, and Nilla wafers to dip in the ganache. It was perfect. If you’re gluten free, just tailor the dipping platter to suit your needs. Enjoy!
