Whenever we have rice left over from a meal, I immediately make baked rice pudding. We always have the ingredients on hand, and this is a very nice recipe from For The Love Of Cooking that takes only 5 minutes to prepare. I’ve made it hundreds of times, and it always turns out perfectly. If your family can eat rice, eggs, milk, sugar, vanilla, cinnamon and raisins, this recipe is for you.
Baked Rice Pudding
1 cup cooked rice
2 eggs
2 cups 2% or homo milk
4 tbsp sugar
1/2 tsp cinnamon
1 tsp vanilla
1/4 raisins (optional)
Preheat oven to 350 degrees. In an oven safe bowl, whisk eggs. Whisk in milk, sugar, cinnamon, and vanilla.
Stir in rice and raisins. Bake for 45 minutes. Enjoy while still warm or chilled.
