I went through my recipe binder tonight and came across a recipe for SunButter/Trail Mix Granola Balls from The Nut-Free Mom Blog. Written by Jenny Kales, it’s an excellent site to check out, if you’re curious.
I modified the recipe slightly by pouring the finished product onto a parchment covered cookie tray and flattening it out into roughly a rectangle. Once it cooled off, I cut it into bars. I’m excited to have made my own homemade chewy bars.
The recipe via The Nut-Free Mom Blog is:
1/3 cup honey
1/4 cup SunButter (I used 4 On-The-Go packs)
2 tablespoons butter
1 cup Rice Krispies
1 cup rolled oats
1/4 cup Enjoy Life Seed and Fruit Trail Mix (I used Mountain Mambo)
Over medium heat in a small saucepan, melt the honey, SunButter, and butter until loose and combined. Turn off heat.
Stir in rice cereal, oats, and trail mix. Combine well.
Pour onto parchment covered cookie sheet, smooth out, and pat into a rectangle with a spatula.
Once cool, cut into snack sized bars. Enjoy!

Sounds great! I bet I can use Enjoy Life rice cereal which we already stock at home. I love new ideas, especially fairly simple ones around the holidays! I really needed this, thanks! Hope all is going great!!!
