    Great post! The FDA really did the food allergy world a disservice when they (wrongly) classified coconuts as tree nuts.

    That said, this past weekend I attended the Natural Products Expo West, an enormous trade show, on behalf of http://www.KidsWithFoodAllergies.org. I came away with the impression that coconut is the “next big thing” in the world of specialty foods — there were lots of products based on coconut. Watch for these to hit the shelves at Whole Foods and other natural foods retailers soon.

    Awesome post, Elizabeth. Coconut oil is undoubtedely very versatile. I use it exclusively for both cooking and DIY beauty treatments. Coconut oil adds so much flavor to food too. I simply can’t live without it.

    Great post! Also, even with people allergic to coconut, they are usually allergic to the meat, which contains protein, and not the oil, which contains little or no protein.
