I decided to make SunButter No Bake Energy Bites the other day as an after school snack for my sons. They take only 15 minutes to make from start to finish, and the boys love them so much that they’re always gone in one day.
Whenever I bake with SunButter, it occurs to me that it would be great if it were sold in 4 ounce cups, since I always need 1/2 cup for recipes. It just occurred to me that these SunButter On The Go pouches solve the problem of messy measuring cups and sticky fingers since 4 of these packs = 4.5 ounces (a little over 1/2 a cup). I then realized that since they’re in pouch format, I could even put them in warm water to warm up a little, and make them even easier to dispense and incorporate into a recipe.
Here’s my recipe for SunButter No Bake Energy Bites. I included hemp seeds in them this time:
1 cup oatmeal
1/2 cup SunButter (Use 4 On The Go packs)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed or hemp seeds
1/2 cup mini chocolate chips
1 tsp vanilla
1 pinch sea salt
Use a spatula to mix all ingredients in a medium bowl until thoroughly incorporated. Working with wet hands, press into balls. These are so delicious, consider doubling the recipe.
I also love SunButter in the pouch format, since they seem to pop up when my jar of SunButter is empty. I always seem to find some of these pouches in my pantry or in my desk at work, since I rely on SunButter so heavily for snacks. When you’re on the go, it’s also very nice to be able to squeeze the SunButter onto your bread, apple, or granola bar, rather than have to clean up a sticky knife. I guess that’s how they came up with the name “On The Go” Packs.
This box of ten pouch format has not been sold in Canada until now, just the single pouches have been available as samples at events. Hi! My son has peanut allergy (he was tested) and the doctor has us avoiding all tree nuts, and said not to eat coconut either. I’ve seen mixed opinions on this (and waiting on a second opinion from a pediatric allergist at the moment) but saw your son is allergic to tree nuts and this recipe has coconuts. Care to share any advice or resources on whether coconut should be avoided? (especially when he hasn’t had a reaction to tree nuts yet! I am avoiding it in my diet too as I’m breastfeeding.) Thanks!
